Summer Pasta Broccoli Salad
Makes 8 to 10 side dish servings
1 box Dreamfields Rotini
1 cup mayonnaise (light or regular)
¼ cup red wine vinegar
¼ cup sugar
3 cups chopped, raw broccoli (about 1-inch pieces)
1 cup shredded Cheddar cheese
½ cup roasted, unsalted sunflower seeds
½ cup crumbled, cooked bacon
¼ cup diced red onion or sliced green onion
Summer Pasta Broccoli Salad brings the crunchiness of broccoli, bacon and both red and green onions together with a smooth, but sharp dressing that will make a statement.
To start, prepare the rotini according to package directions. By using Dreamfields pasta there are some added nutritional benefits to this already healthful salad. Made from durum wheat semolina, Dreamfields provides the same taste and texture as traditional pasta but with twice the fiber and fewer digestible carbohydrates (only five grams) per serving. This makes it ideal for everyone in the family, especially those who have diabetes or pre-diabetes.
Meanwhile, make the dressing in a small bowl, whisking together mayonnaise, vinegar and sugar. Set aside.
Separately, add fresh broccoli, sunflower seeds, bacon, and onion along with cheddar cheese to the pasta. Toss to combine before adding the dressing tossing again till completely coated. Refrigerate, covered, until chilled; at least 1 hour. Let stand at room temperature 15 minutes before serving.
