A Vegetable Medley Pasta Salad That Aims To Delight
We are getting tons of great recipes in our Pastapalooza Pasta Salad Contest this summer. So many- that picking a weekly winner is hard work. Here is a recipe that isnt' a weekly winner, but defeintely too delicious not to share! This tangy pasta salad sports a medley of different crisp and fresh vegetables making it an easy to make summer side.
Veggie Rotini With Dill Delight

1 box Dreamfields Rotini
1 cup diced celery
1 cup diced assorted peppers
1 cup diced onion
½ cups diced tomatoes
½ cup sliced olives
2 Tablespoons chopped dill
3 Tablespoons vinegar
Salt and pepper to taste
2 cups mayo
First, prepare the rotini according to package directions. By using Dreamfields pasta there are some added nutritional benefits to this already healthy salad. Made from durum wheat semolina, Dreamfields provides the same taste and texture as traditional pasta but with twice the fiber and fewer digestible carbohydrates (only five grams) per serving. This makes it ideal for everyone in the family, especially those who have diabetes or pre-diabetes.
Next, mix together all the ingredients and sprinkle with dill before serving. It’s that simple.
