Add A Bit of Mediterranean Flair to Your Party With This Pasta Salad!
Dreamfields’ Pastapalooza Summer Pasta Salad Contest continues on with another great pasta salad recipe from last year’s event! Check out this Mediterranean take on pasta salad then submit your own favorite recipe!
Mediterranean Pasta Salad
Makes 4 main dish servings
½ box Dreamfields Angel Hair
1/3 cup extra virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon dried Italian seasoning
¾ pound cooked medium shrimp
1 cup grape or cherry tomatoes, halved
1 can (15 ounces) chickpeas, rinsed and drained
1 can (2.25 ounces) sliced black olives, drained
¼ cup chopped fresh basil
¼ cup chopped fresh parsley
3 green onions, thinly sliced
½ cup crumbled feta cheese (plain or herbed)
Coarse ground fresh pepper
The Mediterranean Pasta Salad brings fresh seafood to the pasta party in a cool, quick meal that is sure to be a hit.
To start, prepare the angel hair according to package directions. By using Dreamfields pasta there are some added nutritional benefits to this already healthful salad. Made from durum wheat semolina, Dreamfields provides the same taste and texture as traditional pasta but with twice the fiber and fewer digestible carbohydrates (only five grams) per serving. This makes it ideal for everyone in the family, especially those who have diabetes or pre-diabetes.
Whisk the dressing together in a small bowl by combining oil, fresh lemon juice and Italian seasoning. Set aside
Afterwards add the cooked shrimp, fresh tomatoes, chickpeas, olives, basil, parsley and green onions to the pasta, tossing to combine. Add dressing next, tossing to coat before transferring to a platter. Sprinkle with cheese then serve immediately. To serve chilled, do not add dressing or cheese. Cover and refrigerate pasta mixture. Remove from refrigerator 15 minutes before serving; toss with dressing, then sprinkle with cheese
