Avocado, Bacon and Tomato Summer Salad With Dill Dressing
Makes 6 to 8 servings.
1 box Dreamfields Rotini
¾ cup mayonnaise (light or regular)
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh dill or 1 teaspoon dried dill
½ teaspoon salt
½ teaspoon garlic powder
¼ teaspoon pepper
2 cups cherry or grape tomatoes, halved
1 to 2 avocados, chopped
6 sliced bacon, cooked crisp and crumbled
Avocado, Bacon and Tomato Summer Salad With Dill Dressing brings a smooth and crunchy combination to the party. It’s the perfect combination of smooth avocado and crunchy bacon, sweet tomatoes and a lively dill dressing.
To start, prepare the rotini according to package directions. By using Dreamfields pasta there are some added nutritional benefits to this already healthful salad. Made from durum wheat semolina, Dreamfields provides the same taste and texture as traditional pasta but with twice the fiber and fewer digestible carbohydrates (only five grams) per serving. This makes it ideal for everyone in the family, especially those who have diabetes or pre-diabetes.
While the pasta cooks, whisk together mayonnaise, lemon juice, dill, salt, garlic powder and pepper for the dressing. Set aside.
Drain the Dreamfields rotini before adding fresh tomatoes, avocado and crispy bacon crumbs to the pasta. Toss gently to combine before adding the dressing and toss again to coat. Serve immediately. To serve chilled, do not add dressing. Cover and refrigerate pasta mixture. Remove from refrigerator 15 minutes before serving; toss with dressing.
