Remember, Layering Up Is Important Even In The Summer!
As the winners from the Dreamfields’ Pastapalooza Pasta Salad Contest continue to stack up we found one recipe that addresses one of those key questions to making the prefect pasta salad. How do you get all the ingredients to mix just right, every time? Well, we got a great idea of how to tackle this challenge with the Layered Pasta Salad. Instead of mixing all your ingredients at the very end, the Layered Pasta Salad takes the creative approach of having different levels of ingredients to get that perfect mix every time.
Layered Pasta Salad

1 box Dreamfield's Penne Pasta - cooked and drained
1 box frozen peas - thawed (not cooked)
1 can chopped water chestnuts
1 bunch of green onions - sliced - tops and bottoms
1 chopped green pepper
"Dressing"
1 1/2 cups mayo
1 1/2 T sugar or Splenda
1/2 cup grated parmesan cheese
1 jar of Bac-Os or a bag of real bacon bits
First, prepare the spaghetti according to package directions. By using Dreamfields pasta there are some added nutritional benefits to this already healthy salad. Made from durum wheat semolina, Dreamfields provides the same taste and texture as traditional pasta but with twice the fiber and fewer digestible carbohydrates (only five grams) per serving. This makes it ideal for everyone in the family, especially those who have diabetes or pre-diabetes.
Next, mix the mayo, Splenda and cheese together in a bowl. Then add the cooked pasta after it has had time to cool slightly. Mix well.
Afterwards, place 1/3 of the pasta mixture in a large bowl, followed by a1/3 layer of the onions, peppers, water chestnuts and peas on top. Add another 1/3 layer of the pasta mixture to this followed by another 1/3 layer of the other ingredients. Repeat this one more time with a 1/3 layer of the pasta mixture then layer of ingredients before covering with Saran Wrap. Refrigerate the bowl overnight, or up to 24 hours.
Add the Bac-Os or bacon bits after pulling the pasta salad out of the refrigerator and toss the salad before serving.
